Guatemala - Xaya


Xaya is an abbreviation of T’Xayalaj, the Mayan name given to Maria Morales’ small finca on the outskirts of San Marco. 

We’re very excited to return to Huehuetenango for our first Guatemalan coffee of the season. Surrounded by the Sierra Madre Mountains close to Chiapas and the border with Mexico, Maria’s small holding is located in one of our favourite coffee producing regions of Central America.

Our tasting notes:

A lovely tangerine acidity with caramel and almond on the finish.

Variety: Caturra, Catuai, Typica
Harvest: January - March
Process: Washed, sun-dried on patio


‘HueHue’ is an area we know well and somewhere our Guatemalan import partners operate in extensively. T’Xayalaj is just one and a half hectares of land where Maria grows Caturra, Catuai and some Typica also.

Maria and her husband bought the land 12 years ago; this is the first year that she has produced coffee to speciality standards - we bought  the entire crop and look forward to sharing it with you!
