Finca San Francisco is a 12 hectare farm owned by the Solis family. Edgar, his wife Ligia and their son Willian are second generation coffee growers there.
We’ve been buying coffee from Edgar since 2017; the quality is excellent and he’s always looking to improve.
This year we have selected a deliciously sweet and rounded Honey-Processed lot; it’s a great example of what this processing method can add to a coffee - great sweetness and balance with slightly less acidity.
Our tasting notes: Fig, praline and vanilla with dark chocolate and a creamy body.

Finca San Francisco is the name of Edgar Fallas Solis' small holding, located in the mountainous central region of Costa Rica. Edgar, his wife Ligia and their son Willian are the second generation to take over production here. Their farm is divided into different plots, spread out over a range of altitudes with cherry picked and processed according to the varying conditions.
We’ve been buying coffee from Finca San Francisco since 2017; the quality is excellent and Edgar is always looking to improve his methods. This year’s harvest has washed coffees, naturals and of course (being Costa Rica) there are honey processed lots too - it’s one of these that we have selected.
This coffee is a great example of what the Honey Process can add, there’s great sweetness and balance with less acidity and more body than in the washed lots.
Costa Rica has a well established record for speciality coffee, over the last decade it’s become particularly well known for micro-lot production. Alongside this quality focus producers here are leaders on environmental issues too. Edgar is passionate about issues of environmental responsibility. As well as working towards organic production, much of what he does right now is in line with biodynamic farming principles – he champions intercropping and agroforestry; planting coffee trees with avocado, banana and citrus trees.
