El Hato is a farm we have visited and worked with for a number of years. As well as producing incredible washed coffees, they have made some outstanding honey processed lots too.

This exclusive coffee is their first full harvest of the famous geisha coffee; a varietal famed for its aroma and complexity in the cup.

Situated two hours drive south of Guatemala City, in Barberena Santa Rosa, Fraijanes, El Hato is a farm we have visited and worked with for a number of years. As well as producing incredible washed coffees, in recent years they have made some outstanding honey processed lots too.

The coffee has been pre-soaked to homogenise the temperature and lower the count of micro organisms to help achieve a uniform fermentation. Next the crop is carefully pulped by hand before being sun-dried for 14 days. Finally the honeys are prepared in a special mill and then sorted by hand.
