ABOUT

Sourced from Los Altos de Chiapas, Southern Mexico. Sakubel represents the work of farming families from the communities of Tenejapa, Chenalhó and Oxchuc; comprising several generations’ of producers between 25 and 60 years old - their livelihoods are deeply rooted in family-based agriculture.

The more we learn, the more we understand Mexico as an origin like no other - a huge potential for quality and it’s starting to get the recognition it deserves. 

In the remote regions where we’re buying coffee, farmers are using organic and traditional production methods, following low-intervention practices. This mountain or “rusticano” system means that coffee trees grow under the protective shade of native and fruit trees, developing in harmony with the environment.

Such small plots of land, with low yields make these harvests rare and sought after - we’re proud to share this lot with you.

Ensambles Cafes Mexicanos

Sakubel was sourced with the help of Ensambles Coffee who are based in the states of Chiapas, Guerrero, Oaxaca and Veracruz. 

In each state they have a permanent field technician, some of whom are native to these communities. This helps communication with farmers, many of whom speak indigenous languages.

Throughout the year, Ensambles' team of professionals from the Bios Terra Institute, mostly women, interact with their network of producers through farm visits, workshops, and field training.

It’s our third year buying from the producers in these hard to reach corners of Mexico, we couldn’t be happier with this season’s selections. The region’s incredible terroir combines with the farmers' hard work to bring us coffees with remarkable cup quality.

Sakubel is a relatively small lot that won't be on the shelves for long; if you like the sound of the coffee, brew it up while you can!

From Sierra Mazateca to Montaña Alta

In 2024 we visited the Ensambles team to meet these producers and improve our understanding of how they operate.

A drive of around 2000 Kilometres over six days took us from the highlands of Oaxaca to the valleys and mountains of Guerrera. We learned about the different coffee production systems and the social, economic, and environmental challenges faced by farmers.

We saw how the Ensambles team provide on-field education, providing producers with the knowledge to improve their agronomic practices, increase their yields, develop their coffee processing and help them adopt environmentally responsible production systems.
